Bean, Corn & Avocado Salad: A Quick & Easy Kid-Pleaser
“This is good,” said our 7-year-old taste-tester. “No, I mean, really, REALLY good.”
It also takes about 5 minutes to make. We used frozen corn and organic black beans. Yum!
Ingredients
Bean, Corn and Avocado Salad
1 can black beans, drained
1 can yellow sweet corn, drained 1 medium red-ripe tomato
1⁄2 cup chopped raw onions
1 avocado, cubed
2 oz. lime juice
1 Tsp. olive oil
Directions
1. In a large bowl, mix beans and corn. Add onion, tomato and avocado. 2. Season with lime juice and olive oil.
3. Add salt and pepper to taste and serve.
